THE DRAGON
In Anhui Province, the rains come in late spring. Before they do, in those final clear days when the sky above the mountains reaches a particular shade of blue, the harvest takes place. It is one of the most anticipated moments in the tea calendar. The dragon has always belonged to this specific sky in Chinese tradition. Not the deep mountain clouds or the storm, but the azure blue of high altitude before the season turns, where weather and water and time are held briefly in balance. Yu Qian, before the rains, is when the dragon is at rest. When the dragon is at rest, the leaves are at their very best.
FROM THE PLANET
Young Hyson is named from the Chinese Yu Qian, meaning "before the rains," representing a harvest where young Camellia sinensis leaves are plucked just before the monsoon season. Anhui Province produces a leaf of genuine complexity due to shifting mountain climates. Pre-rain harvest teas are consistently higher in amino acids like L-theanine. Studies suggest these compounds provide a particular quality of focus that settles rather than sharpens. The combination of very high antioxidant content and exceptionally low caffeine makes this a cup that works at any hour.
INGREDIENTS
Green tea (Camellia sinensis). No allergens from the UK 14 major allergen list present. Produced in a facility that handles nuts and various botanical ingredients.
HOW TO BREW
Water temperature: 75 to 80°C. Not boiling. Quantity: 1 heaped teaspoon per cup, approximately 2.5g. Steep time: 2 to 3 minutes. Brew to 80 percent strength for up to three cups from a single measure.
