Sundari means beautiful in Sanskrit, a name that reflects both this visual grace and the essential, quiet work being done within the landscape.
FROM THE PLANET
Honey-washing is a meticulous processing method where the coffee cherry is partially dried with fruit pulp still attached to the bean. The natural sugars in the pulp transfer into the seed, creating a sweetness that is unique to this traditional Central American technique. El Salvador's high-altitude volcanic soil, rich in minerals, provides the ideal conditions for this method. Medium-full roasting preserves the origin character of the Brazil, El Salvador, and India beans while developing the depth required for espresso. Studies suggest that the presence of trigonelline and phenolic compounds in Arabica may support metabolic health and provide sustained cognitive support.
