THE HIGHLANDS
The legend begins in the highlands of Ethiopia, where a goat herder named Kaldi noticed his animals behaving with unusual energy after grazing on red berries from an unfamiliar tree. The berries were brought to a local monastery, the monks brewed them, and what followed was the entire history of coffee as the world knows it. That story stretches back to the very dawn of the region's history, and Yirgacheffe has remained a defining origin ever since. The goat moves through these highlands with a playful energy, the same spirited authority that first led to the discovery of the red berries. There is something fitting about this presence here, on a coffee that carries a storied heritage in every cup.
FROM THE PLANET
Yirgacheffe sits at altitude in the Great Rift Valley, where volcanic soil, forest shade and cool mountain air slow the development of the coffee cherry in ways that create extraordinary flavour complexity. These beans are grown under a natural forest canopy, a method that protects the surrounding ecosystem while producing some of the most distinctive cups on earth. Light roasting preserves the delicate terroir that makes Yirgacheffe coffee so celebrated. Studies on high-altitude Arabica suggest that the slower maturation process concentrates natural chlorogenic acids in the bean, which research suggests may support cognitive focus and natural alertness as part of a balanced lifestyle.
