The Body: The texture is rounded and smooth. The mid palate reveals the distinct stone fruit influence of the Pacamara varietal specifically the juicy sweetness of red plum.
The Finish: The experience resolves with a comforting depth. The fruit notes settle into a rich and lasting flavour of milk chocolate and cocoa butter.

The Pacamara Hybrid: This lot features the famous Pacamara varietal which is a genetic cross between the Pacas and Maragogipe varieties created in El Salvador. These massive beans possess a unique cellular structure that traps complex aromatic compounds creating the signature creamy body and stone fruit profile.
Blue Harvest Hydrology: Sourced from the Las Isabellas farm this coffee is part of the Blue Harvest project. The farm protects natural springs and waterfalls ensuring that the water table is replenished rather than depleted. This distinct microclimate creates a humid environment that slows cherry maturation and increases sugar density.
Volcanic Terroir: Grown on the south face of the Cerron Grande of Apaneca at 1450 metres the soil is volcanic Andosol. This porous soil is rich in potassium which is essential for the formation of citric acids and sugars in the coffee cherry.

The Torogoz is a creature of vibrant beauty that mirrors the flourishing ecosystem of the Las Isabellas farm.
 
The National Symbol: The Turquoise-browed Motmot is the national bird of El Salvador and a symbol of freedom as it cannot survive in captivity. Its presence on the farm is a bio-indicator of a healthy ecosystem proving that the 'Heal the Jungle' philosophy is effective.
