It is that time of year when the kitchen cupboards are bursting with jars you only use once. But don't let that jar of cranberry sauce gather dust until next December.
We are sending the Twiga Tunda giraffe (with its very long neck) right to the back of your pantry to retrieve it.
This recipe uses the natural "juicy sweetness" of our Twiga Tunda roast to transform ordinary cranberry sauce into a rich, caffeinated jam. It is the zero-waste, high-caffeine festive hack you didn't know you needed.
The Crimbo Coffee Jam
Ingredients
60ml Brew Planet Twiga Tunda (Brewed strong. Espresso is best, or a short, strong cafetière brew)
150g Cranberry Sauce (Roughly half a standard jar)
1 Orange (Zest only)
1/2 tsp Mixed Spice or Cinnamon
1 tbsp Brown Sugar (Optional, if you like it sweet)
Method
1. Brew a fresh, hot shot of Twiga Tunda. The sun-dried fruit notes in the beans are going to sing when they hit the berries.
2. Grab a small saucepan and tip in the cranberry sauce, the hot coffee, the orange zest, and your spices.
3. Simmer gently on a low heat for about 5 minutes. You want the jelly to melt down and combine with the coffee to form a glossy, thick glaze.
4. Remove from the heat and let it cool. It will thicken up again as it reaches room temperature.
5. Pour it into a clean jar and keep it in the fridge.
How to Use Your Jam
This is a true multitasker. Here is how to pair it, whether you are a meat-eater or totally plant-based.
The "Red Velvet" Latte
Stir 2 tablespoons of your Coffee Jam into the bottom of a mug before pouring over your hot milk. The coffee adds a roasted depth that stops it being too sweet.
• Dairy: Use full fat milk for a creamy, dessert-like texture.
• Vegan: Use Oat Milk. The oat flavour pairs brilliantly with the berry notes for a "crumble in a cup" vibe.
The Sticky Roast Glaze
Brush this glaze over your roast dinner centrepiece 10 minutes before it finishes cooking. The sugars will caramelise into a sticky, coffee-infused crust.
• Meat: Perfect for glazing Pigs in Blankets or a Christmas Ham.
• Vegan: Brush generously over roasted carrots, parsnips, or a Nut Roast for a savoury-sweet kick.
The Boxing Day Toastie
Upgrade your leftover sandwich. Spread a thick layer of Coffee Jam inside your toastie for a sharp, fruity contrast to rich fillings.
• Meat: Brie, Bacon, and leftover stuffing.
• Vegan: Vegan smoked cheddar, cranberry stuffing, and sliced tempeh.
