Jazira Rasa is a brooding and atmospheric blend that captures the volcanic intensity of the Indonesian archipelago. It is designed for the lover of depth offering a heavy viscous cup that prioritizes texture and body over brightness.
The Opening: The entrance is bold and immediate. With very low acidity the palate is greeted by deep earth tones and the bitterness of high percentage cacao which provides an instant grounding sensation.
The Body: This coffee possesses a massive structural weight. The blend creates a thick almost chewy mouthfeel where notes of honey washed nougat and caramelised sugar dominate the mid palate.
The Finish: It concludes with a powerful and resonating darkness. The finish is remarkably smooth yet persistent leaving a lingering impression of baker's chocolate and a whisper of sweet wood smoke.
The Science of the Bean:
This blend is an engineering feat that balances the distinct chemical properties of three coffee origins.
Tri-Continental Fusion: We anchor this blend with Indonesian beans grown in nutrient rich volcanic Andosols which provide the heavy body. We then integrate Indian beans for their high lipid content to boost crema production and finish with a touch of Ethiopian Arabica to introduce complex soluble solids that create the honeyed sweetness.
Pyrolysis and Roasting: This is a level 5 dark roast. We push the beans past the 'second crack' stage of pyrolysis. At this temperature the citric and malic acids break down completely while the simple sugars polymerise into long chain caramel compounds giving the coffee its signature lack of acidity and intense sweetness.
The Honey Process: The 'honey washed' note refers to a hybrid processing method used on a portion of the blend. The mucilage (fruit flesh) is left to dry on the bean during fermentation. This allows the seed to absorb esters and sugars from the fruit pulp which translates into the distinct nougat flavour profile in the final cup.

The Mythical Garuda: This raptor is the real world inspiration for the Garuda the mythical bird of Hindu and Buddhist philosophy and the national emblem of Indonesia. Like the eagle this coffee is an apex presence in its category commanding attention with its strength and majesty.
Island Endemism: The Javan Hawk Eagle is endemic to the humid rainforests of Java meaning it exists nowhere else on Earth. It represents the unique terroir of the island ecosystems where the humid maritime climate creates the perfect conditions for growing dense heavy bodied coffee.
