Christmas Scrumper
 
Picture the scene. It is a crisp December evening. You are wrapped up in layers at a bustling Christmas market. The air smells of roasted nuts and damp pavement, but cutting through it all is the unmistakable scent of spiced cider bubbling in a copper cauldron.
 
This blend is our tribute to that specific moment and to the rough-and-ready "Scrumpy" ciders of our home county. We wanted to bottle the atmosphere of a Somerset winter without the hangover that usually follows.
 
Scrumpy is not refined or polite. It is bold, cloudy, and full of character. To capture that rustic spirit, we built a base of sweet Apple and sharp Elderberry that mimics the complex tang of fermentation. We infused it with heavy, festive aromatics of Star Anise and Clove. Finally, we finished it with a crack of Black Pepper and Ginger. It delivers a satisfying heat that starts in your chest and radiates to your fingertips.
 
The Science: You might ask: How do you mimic the warmth of cider without the alcohol?
 
The Internal Fire (Ginger & Black Pepper): Real farmhouse cider has a warmth that hits the back of the throat. We recreated this physical sensation using Ginger and Black Pepper. These botanicals are thermogenic. They naturally stimulate circulation and raise your core body temperature to give you the feeling of a strong drink while actually hydrating you.
The Farmhouse Texture (Apple & Rosehip): Commercial cider is often filtered until it is clear but traditional Scrumpy is cloudy and thick. We use whole fruit pieces and Rosehip to ensure the brew has body. This releases pectin and Vitamin C into the cup which helps support your immune system against the winter chill.
The Sweet Spot (Stevia Leaf): Market stall mulled wine is usually loaded with sugar syrup to mask the acidity of the wine. We use natural Stevia leaf instead. It balances the tartness of the Hibiscus and provides a rich, sticky mouthfeel that lingers on the palate, yet it has zero impact on your blood sugar levels.
