THE TEA
A single origin steamed Sencha from Kagoshima Prefecture at the southern tip of Japan's Kyushu island. Bright and grassy with a clean earthy umami finish, this is the kind of green tea that reminds the drinker why green tea exists. It is a vibrant, revitalizing cup suited for early mornings or moments requiring mental clarity.
THE PEACOCK
Among the cherry blossom branches and the white mountain haze, the peacock is watching. In Japanese culture the peacock carries associations with watchfulness and protective wisdom, a creature that sees what others miss, holding its ground not through force but through a stillness that has been earned over time. The cherry blossom behind it is not accidental. Hanami, the Japanese practice of gathering beneath blossoming trees to be present in something beautiful and brief, is one of the oldest cultural rituals in Japan. This tea asks for the same quality of attention and rewards it.
FROM THE PLANET
Kagoshima sits at the southern tip of Kyushu, where volcanic soil and subtropical warmth create unique growing conditions. The steaming process that defines Japanese Sencha (Camellia sinensis) is applied immediately after harvest to halt oxidation. This process preserves a higher concentration of catechins than pan-firing or roasting. Catechins are antioxidant compounds that studies suggest are associated with immune support and cellular protection. The volcanic soil of this region produces a leaf with more nutrient density to preserve than most other growing areas.
INGREDIENTS
Green tea (Camellia sinensis). No allergens from the UK 14 major allergen list present. Produced in a facility that handles nuts and various botanical ingredients.
HOW TO BREW
Water temperature: 70 to 75°C. Cooler than you think. Quantity: 1 heaped teaspoon per cup, approximately 2.5g. Steep time: 1.5 to 2 minutes. Japanese Sencha is sensitive to heat. Keep the temperature lower and it will give you everything it has. Brew to 80 percent strength for up to three cups from a single measure.
